This wine represents the best of the best of our barrels of Cabernet Sauvignon produced above the Stag’s Leap estate in 2007. The vintage provided a stunning combination of ripeness and clarity of flavor that is the hallmark of a great vintage. The wine was hand-harvested, meticulously sorted, and fermented on the skins for 30 days. After pressing, the wine was transferred by gravity to 100% new French Oak barrels for 22 months before being bottled un-fined and unfiltered.
The result is our best Cabernet Sauvignon to date, featuring big, heady aromas of black cherry, black currant, raspberry, chocolate, anise, clove, cinnamon. The details are echoed on the palate, with a resounding burst of classic Cabernet flavors that are buffered by sweet, dense tannins and bathed in lush fruit. The finish is long and intense, but with an elegance that seems to add length.
